PrefacePrefaceImproving the quality of food is a key requirement for the food industry. There are a number of factors which have made this area one of growing importance, including increasing health consciousness among consumers, the links between diet and health, ageing population etc. Consumer views, industry initiatives and labeling regulations are changing the way food and food ingredients are seen in the marketplace. A review of current situation in EU focused on V 4 countries, recent and upcoming food products categories and trends are shown in the following chapters.The food producers of EU but also specially in V 4 countries can be inspired by ancient foods, organic or healthy foods, traditional foods and ingredients used and labelled in new ways. The use of particular food ingredients and food preparation methods has been passed on from one generation to the next, and are nowadays referred to as 'traditional foods', but innovation is the key how to survive in not easy times.However, topic of food safety and the protection of consumer interests is alway current and of increasing concern to the general public. Consumer confidence is an essential outcome of a successful food policy and control. EU food safety and its legislation has evolved years, reflecting a blend of scientific, social, political and economic factors. But it is a fact and one of a challenge of food safety, that foodbome diseases remain responsible for high levels of morbidity and mortality in the general population also in V 4 countries, but particularly for at-risk groups, such as infants and young, children, the elderly and the immunocompromised.In order to achieve a high level of health protection for consumers and trade and to guarantee their right to information, it should be ensured that consumers are appropriately informed as regards the food they consume. Consumers' choices can be influenced by, inter alia, health, economic, environmental, social and ethical considerations. It is for a huge discussion if is it satisfy just to put on the product label made in EU". Important tool of food safety, quality and control are labelling requirements complemented by a number of provisions applicable to all foods in particular circumstances or to certain categories of foods. While the original objectives and the core components of the current labelling legislation are still valid, it is necessary to streamline it in order to ensure easier compliance and greater clarity and to modernise it in order to take account of new developments in the field of food information.The parliament of the EU makes legislation in the form of directives and regulations, many of which are mandatory for member states including V 4 countries. Much attention is paid to the protection and promotion of regional and traditional products. Regional products are goods produced only in some regions of the EU, and their name and production technology are protected by law.The aim of following chapters is to give an overview about food product quality, safety and their aspects, their innovation, characterization of traditional food, organic food sector and marketing implications as well.m
