Foreword from the original book 'I began collecting receipts when 1 was under-cook to Mrs Harcourt, a fine cook in the French fashion, at Southwold in Wiltshire. Mrs Harcourt, who came from Sussex, also taught me to prepare some of her own family receipts. I remember my mother, who was a Bedfordshire woman, teaching me some country dishes which she had learned, and have never before been written down. She too was a good cook, in the ways of the country. While in the service of Lady Marjorie Bellamy, I prepared dinners and banquets for the famous, which Mr Bellamy has kindly permitted me to mention. I was very proud to cook a dinner for no less a personage than King Edward himself! I owe a great debt to Lady Marjorie, who first suggested that I put my collection of receipts into a book, in the manner of the well-known Mrs Beeton; and to Miss Elizabeth Bellamy, who helped me in its preparation.
